Ingredients

- 2 medium sweet potatoes
- 3/4 pound lean ground turkey
- 4 garlic cloves, minced
- 1 teaspoon chili powder
- 1/4 cup grated pepper Jack cheese
- 1 teaspoon olive oil
- 1 1/4 teaspoons ground cumin (divided)
- 1/4 + 1/8 teaspoon salt
- 1/4 + 1/8 teaspoon ground pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/4 cup canned crushed tomatoes
Instructions
- Microwave the pierced sweet potatoes for 8-10 minutes until tender. Let cool.
- Cut in half and scoop out flesh into a bowl; mix with olive oil, cumin (½ tsp), salt (¼ tsp), and pepper (¼ tsp).
- In a nonstick skillet, cook the ground turkey until fully cooked; add garlic and spices, then stir in crushed tomatoes.
- Fill sweet potato skins with the turkey mixture, top with cheese, and broil for about 30 seconds until melted.
Notes
- Adjust the spice level by adding more chili powder if desired.
- These stuffed sweet potatoes can be garnished with fresh cilantro or avocado for added flavor.
