  • 100g sourdough starter
  • 1/3 cup softened cream cheese
  • Juice from a fresh lemon (about 1 tablespoon)
  • 1 cup ripe blueberries
  • Grated lemon zest from one lemon
  • 2 tablespoons honey
  • 2 tablespoons regular white sugar

Instructions

  1. Stir together starter, water, and flour. Let it sit for half an hour.
  2. Sprinkle in the salt, then knead the dough.
  3. Cover the dough and let it rest for 4-6 hours, stretching and folding every thirty minutes.
  4. Blend the sugar, lemon peel, and cream cheese until smooth and creamy.
  5. During the final stretch and fold, gently press the blueberries into the dough.
  6. Flatten the dough into a rectangle, smear the cream cheese mixture on top, roll it into a ball, and seal the filling inside.
  7. Lay the dough seam-side up in a floured banneton, cover it, and refrigerate for 8-12 hours.
  8. Preheat your Dutch oven and bake the dough at 250°C for 20 minutes with the lid, then lower to 220°C for 20-25 minutes with the lid off.
  9. Brush the warm bread with the mix of honey and lemon juice.
