Description
Delicious Strawberry Cheesecake Quesadillas filled with a sweet and creamy strawberry cream cheese mixture, perfect for a dessert treat.

- 8 oz Cream cheese, softened
- 1/4 cup Granulated sugar
- 1 tsp Vanilla extract
- 1 cup Fresh strawberries, diced
- 4 6-inch flour tortillas
- 2 tbsp Butter, softened
- 1 tsp Ground cinnamon
- Strawberry sauce for dipping
Instructions
- In a mixing bowl, add the softened cream cheese, sugar, and vanilla extract. Beat together until smooth and creamy.
- Dice the strawberries and gently fold them into the cream cheese mixture until evenly combined.
- Spread half of the strawberry cream cheese mixture evenly over one tortilla.
- Heat 1 teaspoon of butter in a skillet over medium-high heat. Once melted, place the tortilla in the pan with the cream cheese side facing up.
- Spread 1 teaspoon of butter on a second tortilla and place it butter-side up on top of the cream cheese layer.
- Cook for 2–3 minutes per side, flipping carefully, until both sides are golden brown and crispy.
- In a small bowl, mix together the cinnamon and sugar. Sprinkle the mixture evenly over the warm quesadilla.
- Repeat the process for the second quesadilla, or use a griddle to cook both at the same time.
- Remove from heat and let rest for about 2 minutes before slicing. Serve warm with strawberry sauce for dipping.
Notes
- For a twist, try adding other berries along with the strawberries.
- The quesadillas are best served warm.
- Store any leftovers in an airtight container in the fridge for up to 2 days.
