Description

Delicious Strawberry Cheesecake Quesadillas filled with a sweet and creamy strawberry cream cheese mixture, perfect for a dessert treat.


Ingredients

  • 8 oz Cream cheese, softened
  • 1/4 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1 cup Fresh strawberries, diced
  • 4 6-inch flour tortillas
  • 2 tbsp Butter, softened
  • 1 tsp Ground cinnamon
  • Strawberry sauce for dipping

Instructions

  1. In a mixing bowl, add the softened cream cheese, sugar, and vanilla extract. Beat together until smooth and creamy.
  2. Dice the strawberries and gently fold them into the cream cheese mixture until evenly combined.
  3. Spread half of the strawberry cream cheese mixture evenly over one tortilla.
  4. Heat 1 teaspoon of butter in a skillet over medium-high heat. Once melted, place the tortilla in the pan with the cream cheese side facing up.
  5. Spread 1 teaspoon of butter on a second tortilla and place it butter-side up on top of the cream cheese layer.
  6. Cook for 2–3 minutes per side, flipping carefully, until both sides are golden brown and crispy.
  7. In a small bowl, mix together the cinnamon and sugar. Sprinkle the mixture evenly over the warm quesadilla.
  8. Repeat the process for the second quesadilla, or use a griddle to cook both at the same time.
  9. Remove from heat and let rest for about 2 minutes before slicing. Serve warm with strawberry sauce for dipping.

Notes

  • For a twist, try adding other berries along with the strawberries.
  • The quesadillas are best served warm.
  • Store any leftovers in an airtight container in the fridge for up to 2 days.
