Description
A Flavorful Delight of spicy shrimp served over a bed of rice with fresh avocado.
Ingredients

- 1 cup white or brown rice
- 12 large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 ripe avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon sesame seeds
- 1 lime, quartered, for serving
Instructions
- Cook the rice according to the package instructions. Once cooked, set aside and keep warm.
- In a medium bowl, combine the olive oil, lime juice, chili powder, paprika, cayenne pepper, salt, and pepper. Whisk until well blended.
- Add the peeled and deveined shrimp to the bowl with the marinade. Toss the shrimp until they are fully coated in the mixture. Let marinate for 10-15 minutes.
- Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.
- To assemble the bowls, divide the rice between two bowls. Top with cooked shrimp, sliced avocado, and a sprinkle of fresh cilantro.
- Garnish with sesame seeds and serve with lime wedges on the side for squeezing over the top.

- Feel free to adjust the spice levels by adding more or less cayenne pepper.
