Description

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Season the chicken thighs with salt, pepper, and paprika. Add the chicken to the skillet, skin-side down, and sear for 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the sliced mushrooms and thyme, cooking for another 3-4 minutes until the mushrooms are tender.
  3. Stir in the rice, allowing it to toast for about 1 minute. Pour in the chicken broth and bring to a simmer. Nestle the seared chicken thighs back into the skillet, skin-side up. Cover and reduce the heat to low, cooking for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
  4. Once done, remove from heat and let it sit for 5 minutes before serving. Garnish with fresh parsley and enjoy the comforting flavors of this smothered chicken and rice dish.
