- 13–14 pieces Pitted Dates
- 1 cup Unsweetened Shredded Coconut
- 4 Tbsp Cashew Butter
- 1 cup Dark Chocolate Chips
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Spread the shredded coconut in an even layer on the prepared baking sheet and bake for 4-5 minutes, until golden brown.
- In a bowl, combine the toasted coconut with the cashew butter until well mixed.
- Stuff each pitted date with the coconut-cashew mixture and place on a parchment-lined tray.
- Melt the dark chocolate chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
- Drizzle or spoon the melted chocolate over each stuffed date to coat.
- Chill the tray of dates in the fridge for at least one hour to set the chocolate.
