A refreshing and vibrant pineapple mango salsa that’s perfect for summer gatherings, or as a topping for tacos and grilled dishes.
Ingredients

- 2 cups diced fresh pineapple (3 mangos)
- 2 cups diced fresh mango
- 1 cup diced red bell pepper (1 large red bell pepper)
- 1 cup diced red onion (½ large red onion)
- Finely diced jalapeno (stem, ribs, and seeds removed)
- ⅓ cup chopped fresh cilantro
- ¼ cup freshly squeezed lime juice (3 limes)
- ¼ teaspoon kosher salt
Instructions
- Add the diced pineapple, mango, red bell pepper, red onion, finely diced jalapeno, and chopped fresh cilantro to a large mixing bowl (4-5 quarts).
- Pour the fresh lime juice and kosher salt over the fresh fruit and vegetables.
- Stir to completely coat and combine the salsa ingredients.
- Cover and chill in the refrigerator for 30 minutes.
- Stir the salsa before you are ready to serve.
Notes
- For a spicier salsa, include more jalapeno or keep some of the seeds.
- Serve with tortilla chips, grilled chicken, or fish for added flavor.
