- two 8-ounce packages cream cheese blocks, well softened to room temperature
- 8 ounces crushed pineapple from a can, with the juice well squeezed out and drained off
- 1 ¾ cup chopped pecans, divided
- ¼ cup chopped green onion, use both white and green parts
- ¼ cup green bell pepper, seeded and finely chopped
- 1 teaspoon salt, or to taste
- ½ to 1 teaspoon garlic powder
- 2 teaspoons fresh parsley, finely minced for garnishing
Instructions
- In a large bowl, combine the cream cheese, pineapple, half the nuts, green onions, green bell pepper, salt, and garlic powder.
- Using a spatula or your hands, gently form the mixture into a ball.
- Taste and adjust seasoning as needed, adding more salt, garlic powder, or spices to preference.
- If the mixture is too soft, refrigerate for about 15 minutes to firm it up.
- Once shaped into a ball, roll it in the remaining chopped nuts to coat evenly.
- Wrap the cheese ball in plastic wrap and refrigerate for at least 15 to 30 minutes before serving.
- Optionally garnish with fresh parsley before serving with crackers or dippers.

- Ensure cream cheese is softened for easier mixing.
