- 900 g boneless skinless chicken breasts or thighs
- 680 g baby red potatoes, quartered
- 450 g whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 115 g unsalted butter, melted
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 120 ml chicken broth
- 1 tablespoon chopped fresh parsley, for garnish (optional)
Instructions
- Place chicken, quartered potatoes, and carrot chunks into the slow cooker.
- In a separate bowl, mix together melted butter, minced garlic, Italian seasoning, salt, black pepper, and chicken broth until combined.
- Pour the garlic butter mixture over the contents of the slow cooker. Gently stir to ensure all ingredients are evenly coated.
- Cover and cook on low setting for 6 to 7 hours or high for 3 to 4 hours until the chicken is tender and vegetables are cooked through.
- Sprinkle with freshly chopped parsley before serving, if desired. Distribute onto plates and enjoy.
