Description

A delicious and easy recipe for barbecue chicken cooked in foil packs, perfect for grilling or baking.


Ingredients

  • about 1.25 pounds boneless skinless chicken breasts, diced into bite-sized pieces
  • ⅔ cup barbecue sauce
  • 2 to 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons olive oil, divided
  • 1 teaspoon freshly ground black pepper
  • 1 medium/large zucchini, diced into bite-sized pieces
  • 1 medium red bell pepper, diced into bite-sized pieces
  • 1 medium yellow or orange bell pepper, diced into bite-sized pieces
  • salt and pepper to taste, for seasoning vegetables
  • green onions sliced into thin rounds, optional for garnishing

Instructions

  1. To a large ziptop plastic bag, add the chicken, barbecue sauce, honey, vinegar, 2 tablespoons olive oil, and 1 teaspoon pepper. Seal the bag and squish the contents to evenly distribute and coat the chicken. Place the bag in the fridge for at least 15 minutes (or overnight) to marinate.
  2. Preheat the outdoor grill to medium-high heat. Alternatively, preheat the oven to 425°F.
  3. Place 4 large sheets of foil on the counter and evenly distribute the marinated chicken to the center of each piece of foil.
  4. Evenly distribute and nestle the zucchini, peppers, and broccoli around the chicken on each of the 4 pieces of foil.
  5. Drizzle the remaining 2 tablespoons of olive oil over the vegetables to lightly coat them and season with salt and pepper.
  6. Seal up the foil packs tightly and place them on the grill. Grill for about 9 to 10 minutes, adjusting time based on your grill type, chicken size, and heat level.
  7. Optionally garnish with green onions and serve immediately.

Notes

  • Marinating the chicken overnight will enhance the flavor.
  • This recipe can be modified by adding other vegetables.
