Description

Crazy Good Street Corn Chicken is a delicious, flavorful dish featuring seasoned grilled chicken, grilled corn, and a zesty corn salsa, all served in soft corn tortillas with a creamy jalapeno lime cashew sauce.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper
  • 2 ears corn, husked and washed
  • 2 teaspoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 ripe avocado, diced
  • 1 jalapeno pepper, thinly sliced
  • 1/3 cup finely diced fresh cilantro
  • 1/4 cup finely diced red onion
  • 1 lime, juiced
  • 1/2 cup raw cashews
  • 1/3 cup water, plus more if needed for thinning
  • 1 clove garlic
  • 2 tablespoons fresh lime juice
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon onion powder
  • 8 soft corn tortillas
  • Extra thinly sliced jalapenos
  • Extra fresh cilantro

Instructions

  1. Soak cashews in warm water for at least 2 hours, or boil for 30 minutes.
  2. Drain cashews and blend with 1/3 cup water, jalapeno, garlic, lime juice, salt, onion powder, and black pepper until smooth.
  3. Combine chicken thighs with olive oil, cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt, and black pepper in a bowl. Marinate for 30 minutes to 1 hour.
  4. Brush corn with olive oil and sprinkle with cumin, chili powder, salt, and pepper.
  5. Preheat grill to 400°F and grill chicken for 6-8 minutes per side, until cooked through. Grill corn for 15-20 minutes, turning occasionally.
  6. Let chicken rest, then chop into bite-sized pieces. Remove corn kernels.
  7. Mix corn kernels with avocado, jalapeno, cilantro, red onion, lime juice, and season with salt and pepper.
  8. Char tortillas on flame or skillet, then spread jalapeno lime cashew sauce on each.
  9. Top tortillas with chicken, street corn salsa, jalapenos, and cilantro. Serve immediately.
