Instructions
- Remove cream cheese from refrigerator and let it sit at room temperature for 30 minutes until soft. Alternatively, microwave for 15-20 seconds if you’re in a hurry.
- Thaw frozen corn by running it under warm water or letting it sit at room temperature. Drain thoroughly and pat completely dry using paper towels to remove all excess moisture.
- Finely dice the shallot and red bell pepper into small, even pieces. Roughly chop fresh cilantro and set all vegetables aside.
- In a large mixing bowl, combine softened cream cheese and Greek yogurt. Stir vigorously until the mixture is completely smooth with no lumps remaining. Add garlic powder, chili powder, and salt, mixing thoroughly to distribute seasonings evenly throughout the creamy base.
- Add shredded cheddar cheese, drained corn kernels, diced shallot, chopped red bell pepper, fresh lime juice, and cilantro to the bowl. Fold all ingredients together using a spatula until everything is evenly distributed and well coated in the cream cheese mixture.
- Taste the dip and adjust seasoning as needed. Add more lime juice for extra tang, more salt for depth, or more chili powder for a subtle kick.
- Transfer the dip to a serving bowl, cover tightly with plastic wrap, and refrigerate for a minimum of 30 minutes to allow flavors to meld together. For best results, make this up to 24 hours in advance.
- Before serving, give the dip a quick stir and garnish with extra cilantro or a sprinkle of cheddar if desired. Serve chilled with tortilla chips, crackers, or fresh vegetables.
