Description

Chocolate Chip Cookie Dough Brownie Bombs are a delightful treat combining the rich flavor of brownies and the sweetness of cookie dough, all coated in chocolate.


Ingredients

  • 1 box brownie mix plus ingredients as directed on the box
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup mini chocolate chips
  • 2 cups chocolate chips for coating
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare brownie mix as directed on the package; bake in a 9×13 inch pan. Cool completely. I usually let mine cool on a wire rack for faster cooling.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy. Use an electric mixer for best results – it makes the process so much faster!
  3. Add milk and vanilla; mix until combined.
  4. Gradually add flour and salt; mix until just combined. Stir in mini chocolate chips. Don’t overmix the dough!
  5. Scoop cookie dough into 1-inch balls; place on a parchment-lined baking sheet. Freeze for 30 minutes. This helps them hold their shape during dipping.
  6. Crumble cooled brownies. Flatten a brownie piece, enclose a cookie dough ball, and seal. Repeat. Make sure the brownie completely covers the cookie dough.
  7. Melt chocolate chips and oil in a microwave-safe bowl until smooth. Microwave in 30-second intervals, stirring in between, to prevent burning.
  8. Dip each brownie bomb in melted chocolate; let excess drip off. Place on a parchment-lined baking sheet. Refrigerate until chocolate sets. This takes about 30 minutes.

  • Ensure the brownie crust is completely cooled before enclosing the cookie dough.
  • For quicker cooling, place the brownie pan on a wire rack.
  • Test the chocolate coating by dipping one bomb first, adjusting the melting time if necessary.
