- 8 large eggs

- 1 cup shredded cheddar cheese

- 2 tablespoons unsalted butter, melted
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1/2 cup chopped baby spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
- 1/2 cup cooked, crumbled breakfast sausage or bacon (optional)
- 1/4 cup chopped fresh parsley (for garnish, optional)
Instructions
- Preheat Oven: Set the oven to 350°F (175°C) and prepare a 9×13-inch baking dish or a large ovenproof skillet by greasing it with butter or nonstick spray.
- Arrange Biscuits: Distribute the quartered biscuit dough evenly across the bottom of the prepared dish.
- Whisk Egg Mixture: In a mixing bowl, whisk together eggs, milk, salt, black pepper, and smoked paprika until fully blended.
- Add Cheese and Vegetables: Fold in cheddar cheese, mozzarella cheese, Parmesan cheese, diced bell pepper, onion, chopped spinach, and any optional meat.
- Combine and Submerge Biscuits: Pour the egg and vegetable mixture evenly over the biscuit pieces, then gently press down with a spatula to mostly submerge the biscuits.
- Add Butter: Drizzle melted butter evenly over the surface.
- Bake: Transfer to the oven and bake for 25 to 30 minutes until puffed and the center is just set.
- Cool and Garnish: Remove from the oven and allow to rest for 5 minutes before slicing. Garnish with chopped parsley if desired.
