Description

A delicious and hearty dish combining sweet potatoes with all the flavors of a cheeseburger.


Ingredients

  • 4 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 lb ground beef
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 cup cheddar cheese, shredded
  • 1 cup iceberg lettuce, shredded
  • ¼ cup white onion, diced
  • ¼ cup tomato, diced
  • ¼ cup baby dill pickles, sliced
  • Optional: sesame seeds for garnish

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Wash and dry the sweet potatoes, then place them on the baking sheet. Poke a few holes all over with a fork and rub them lightly with oil.
  3. Bake for 45–60 minutes, until the sweet potatoes are super soft and easy to pierce with a fork.
  4. While they bake, cook the ground beef in a skillet over medium heat, breaking it apart as it cooks. Once browned, drain any excess grease and stir in the salt, pepper, garlic powder, onion powder, and paprika.
  5. For the sauce, whisk together the mayo, ketchup, mustard, pickle juice, and salt until smooth and creamy. Refrigerate until ready to serve.
  6. Lower the oven temperature to 350°F once the potatoes are done. Slice them open, fluff up the insides with a fork, then fill them with the seasoned beef and shredded cheese.
  7. Return them to the oven for a few minutes until the cheese is melted and gooey.
  8. Top with lettuce, onion, tomato, pickles, and a drizzle of sauce. Finish with sesame seeds if desired.
