Description

These Caramel Cheesecake Bites are a delightful treat that combines the rich flavors of cream cheese and caramel in a bite-sized form, perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 15.25 ounces yellow cake mix
  • 8 ounces cream cheese (softened)
  • 2 teaspoons caramel flavoring
  • 12 ounces salted caramel candy melts

Instructions

  1. Heat treat the dry cake mix by microwaving it in two 30-second intervals, stirring after each, and allowing it to cool.
  2. In a medium-sized mixing bowl, beat the cream cheese and caramel flavoring with a handheld mixer until completely smooth.
  3. Sprinkle the cooled, dry cake mix over the cream cheese mixture and mix until well incorporated.
  4. Tightly cover the cheesecake dough and chill in the refrigerator for 2 hours.
  5. Line a baking sheet with parchment paper.
  6. Use a 1-tablespoon cookie scoop to scoop the cheesecake dough, roll into balls, and place on the prepared baking sheet.
  7. Microwave the salted caramel candy melts in a heat-safe medium bowl in 30-second intervals, stirring until completely melted and smooth.
  8. Roll the cheesecake bites in the melted candy melts, using a fork to tap off excess coating.
  9. Use a toothpick to push the coated cheesecake bites onto the parchment-lined baking sheet and let them harden completely before serving.

Notes

  • Make sure to heat treat the dry cake mix to eliminate any raw flour taste.
  • You can adjust the amount of caramel flavoring to your taste preference.
  • For a more decorative touch, sprinkle crushed nuts or sprinkles on top of the melted candy coating before it hardens.
