Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until the texture resembles wet sand. Press the mixture firmly into the bottom and sides of a 9-inch pie pan. Chill while you prepare the filling.
- In another mixing bowl, beat softened cream cheese, brown sugar, and vanilla until smooth and creamy. Gradually add heavy cream and continue beating until the mixture is light and fluffy.
- Gently fold the prepared butterscotch pudding into the cream cheese mixture until fully combined and smooth. Pour this luscious filling into the chilled crust and spread evenly.
- Spread whipped cream or Cool Whip over the filling, then drizzle generously with caramel sauce. Refrigerate for at least 4 hours (or overnight) until fully set and ready to slice.
