Description

A delicious Bacon Egg Cheese Breakfast Burrito filled with scrambled eggs, cheese, breakfast sausage, and crispy bacon, perfect for a quick and satisfying meal.


Ingredients

  • 2 tablespoons butter
  • 6 large eggs
  • ½ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper
  • Sea salt and pepper to taste
  • 4 large tortillas, warmed
  • 2 cups roasted or pan-fried potatoes
  • 1 cup cheddar cheese, grated
  • 1 cup breakfast sausage, cooked and cut into pieces
  • 5 slices bacon, sliced and cooked
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Crack the eggs into a large bowl and whisk them with garlic powder, cayenne, sea salt, and black pepper until well blended.
  2. Melt butter in a nonstick skillet over medium heat, then pour in the eggs.
  3. Use a spatula to stir gently and constantly, cooking low and slow until the eggs are mostly set but still soft and creamy, about 5 to 8 minutes.
  4. Remove from heat just before they are fully done to prevent drying out.
  5. Warm the tortillas until soft and flexible, either in a skillet or wrapped in a damp towel in the microwave.
  6. Lay each tortilla flat and spoon half a cup of scrambled eggs into the center.
  7. Top with half a cup of potatoes, a quarter cup of cheddar cheese, and a mix of cooked bacon and breakfast sausage.
  8. Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom to seal.
  9. Heat a little butter or oil in a skillet over medium heat, place the burrito seam side down, and cook for 2-3 minutes on each side until golden brown.
  10. Alternatively, arrange filled burritos on a baking sheet and bake at 350°F for 10 minutes until the cheese is fully melted.
  11. Cut burritos in half if desired, and serve with sour cream and salsa.

Notes

  • Can use store-bought or homemade potatoes for the filling.
  • For a vegetarian option, omit the bacon and sausage.
