A delicious Bacon Egg Cheese Breakfast Burrito filled with scrambled eggs, cheese, breakfast sausage, and crispy bacon, perfect for a quick and satisfying meal.

- 2 tablespoons butter
- 6 large eggs
- ½ teaspoon garlic powder
- ⅛ teaspoon cayenne pepper
- Sea salt and pepper to taste
- 4 large tortillas, warmed
- 2 cups roasted or pan-fried potatoes
- 1 cup cheddar cheese, grated
- 1 cup breakfast sausage, cooked and cut into pieces
- 5 slices bacon, sliced and cooked
- Sour cream for serving
- Salsa for serving
Instructions
- Crack the eggs into a large bowl and whisk them with garlic powder, cayenne, sea salt, and black pepper until well blended.
- Melt butter in a nonstick skillet over medium heat, then pour in the eggs.
- Use a spatula to stir gently and constantly, cooking low and slow until the eggs are mostly set but still soft and creamy, about 5 to 8 minutes.
- Remove from heat just before they are fully done to prevent drying out.
- Warm the tortillas until soft and flexible, either in a skillet or wrapped in a damp towel in the microwave.
- Lay each tortilla flat and spoon half a cup of scrambled eggs into the center.
- Top with half a cup of potatoes, a quarter cup of cheddar cheese, and a mix of cooked bacon and breakfast sausage.
- Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom to seal.
- Heat a little butter or oil in a skillet over medium heat, place the burrito seam side down, and cook for 2-3 minutes on each side until golden brown.
- Alternatively, arrange filled burritos on a baking sheet and bake at 350°F for 10 minutes until the cheese is fully melted.
- Cut burritos in half if desired, and serve with sour cream and salsa.
Notes
- Can use store-bought or homemade potatoes for the filling.
- For a vegetarian option, omit the bacon and sausage.
- Wrap burritos in foil for a convenient on-the-go meal.
