Description

Arizona Sunshine Pie is a refreshing dessert featuring a creamy lemon filling in a buttery graham cracker crust, perfect for warm days.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Lemon Cream Filling:
  • 2 packages (8 oz each) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Optional Garnish:
  • Thin lemon slices
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until all the crumbs are evenly coated.
  3. Press the mixture into the bottom and slightly up the sides of a 9-inch pie dish.
  4. Bake the crust for 8 minutes until lightly golden. Allow to cool.
  5. In a large mixing bowl, beat the softened cream cheese until smooth.
  6. Add the sweetened condensed milk and mix until fully combined.
  7. Add the eggs one at a time, mixing gently after each addition.
  8. Mix in the sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
  9. Pour the lemon filling into the crust and smooth the top.
  10. Bake for 35 to 40 minutes until the edges are set with a slight jiggle in the center.
  11. Remove and cool completely at room temperature.
  12. Refrigerate for at least 4 hours or overnight before serving.
  13. Garnish with fresh lemon slices and powdered sugar if desired.
  14. Slice chilled and serve cold.
