- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract

- Thin lemon slices
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until all the crumbs are evenly coated.
- Press the mixture into the bottom and slightly up the sides of a 9-inch pie dish.
- Bake the crust for 8 minutes until lightly golden. Allow to cool.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the sweetened condensed milk and mix until fully combined.
- Add the eggs one at a time, mixing gently after each addition.
- Mix in the sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
- Pour the lemon filling into the crust and smooth the top.
- Bake for 35 to 40 minutes until the edges are set with a slight jiggle in the center.
- Remove and cool completely at room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh lemon slices and powdered sugar if desired.
- Slice chilled and serve cold.
