Description

A festive American Flag Cake perfect for celebrations.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¾ cups granulated sugar
  • ¾ cup unsalted butter (room temperature)
  • 3 large eggs (room temperature)
  • 1 tablespoon vanilla extract
  • ½ cup sour cream
  • ¼ cup vegetable oil
  • 1 cup buttermilk
  • 1 ½ cups whole milk (very cold)
  • ½ cup powdered sugar (sifted)
  • 2 boxes (3.4 ounce) instant vanilla pudding
  • 2 containers (8 ounce) whipped topping (thawed)
  • 48 large fresh blueberries
  • 2628 whole fresh strawberries (halved)

Instructions

  1. Preheat the oven to 350°F. Lightly spray a 12x17x1-inch half sheet pan with non-stick baker’s spray and set aside.
  2. Sift together the all-purpose flour, baking powder, and salt in a medium bowl. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the granulated sugar and unsalted butter on medium-high speed for 4-5 minutes until light and fluffy.
  4. Reduce the speed to low and add the eggs one at a time, followed by the vanilla extract. Mix until fully incorporated.
  5. Add the sour cream and vegetable oil, mixing on low speed until combined.
  6. Gradually add the flour mixture and buttermilk, mixing until fully combined after each addition.
  7. Spread the batter into an even layer in the prepared pan. Bake for 16-18 minutes or until edges are lightly browned and a toothpick comes out with a few moist crumbs. Allow the cake to cool completely in the pan before frosting.
  8. Using a handheld mixer in a large bowl, combine cold milk and powdered sugar, beating until dissolved.
  9. Add instant vanilla pudding mix and beat until thickened. Let sit for 2-3 minutes to fully set.
  10. Gently fold in the thawed whipped topping until combined.
  11. Spread two-thirds of the frosting evenly over the cooled cake. Use the remaining frosting in a piping bag for decoration.
  12. Top the cake with blueberries and halved strawberries in the pattern of the American flag, with blueberries in the upper left corner and strawberries across the rest.
  13. Pipe remaining frosting in straight lines to represent the white strips of the flag. Add stars or dots between the blueberries using the remaining frosting.
