- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Juice of 2 limes
- 4 cups mixed salad greens (spinach, arugula, and romaine)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn (canned or frozen)
- 1/4 cup red onion, thinly sliced
- 1 jalapeño, sliced (optional for spice)
- Fresh cilantro, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, about 6-8 minutes. Stir in the garlic powder, onion powder, cumin, salt, and pepper. Cook for another 2-3 minutes until the turkey is well seasoned and fully cooked. Remove from heat and let it cool slightly.
- In a small bowl, whisk together the lime juice, a pinch of salt, and freshly ground black pepper. Adjust seasoning to taste.
- In a large salad bowl, add the mixed salad greens. Top with the cooked turkey, cherry tomatoes, avocado, black beans, corn, red onion, and jalapeño slices if using.
- Drizzle the lime dressing over the salad mixture. Gently toss everything together until well combined.
