Ingredients

  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon finely grated lemon zest (optional, for glaze)

Instructions

  1. Set oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat softened butter with powdered sugar using a mixer until pale and fluffy.
  3. Mix in lemon juice, lemon zest, and vanilla extract until combined.
  4. Whisk together flour, cornstarch, and salt in a separate bowl. Gradually add to the wet ingredients, mixing until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough, form into balls, and arrange on the prepared baking sheet. Slightly flatten each with fingertips.
  6. Bake for 10 to 12 minutes, until cookies are just set and still pale. Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. In a small bowl, whisk powdered sugar with lemon juice until smooth. Add lemon zest for extra flavor if desired.
  8. Once cooled, drizzle or dip each cookie with the lemon glaze. Let set for 15 minutes before serving.
