Description

Ingredients

  • 1 cup cooked barley
  • 2 cups roasted mixed vegetables (carrots, beets, parsnips)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup pumpkin seeds
  • 2 tbsp balsamic vinegar
  • Olive oil, salt, and pepper to taste

Instructions

  1. Toss the mixed vegetables with olive oil, salt, and pepper, and roast at 400°F (200°C) for 30 minutes.
