Description

A delightful combination of creamy white chocolate and rich caramel, this fudge is perfect for indulgent moments.

Ingredients

Scale
  • 680 g white baking chips
  • 396 g sweetened condensed milk
  • 2.5 tablespoons heavy cream (for fudge base)
  • 25 individually wrapped caramels, unwrapped
  • 1.5 tablespoons heavy cream (for caramel swirl)

Instructions

  1. Line a 20 x 20 cm baking dish with parchment paper, leaving an overhang to assist with removal.
  2. Combine white baking chips, sweetened condensed milk, and 2.5 tablespoons heavy cream in a medium microwave-safe bowl. Heat in 30-second bursts, stirring thoroughly after each, until fully melted and smooth.
  3. Place the unwrapped caramels and 1.5 tablespoons heavy cream in a small microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the mixture is melted and uniform.
  4. Gently fold three-quarters of the melted caramel into the white chocolate mixture with minimal strokes to maintain visible caramel ribbons.
  5. Evenly transfer the fudge mixture into the prepared dish. Dollop the remaining caramel over the surface and use a knife to create a decorative swirl pattern.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until fully firm.
  7. Lift the fudge from the pan using the parchment overhang. Cut into 25 even pieces with a sharp knife. Store refrigerated until serving.

Notes

  • Ensure the caramels are unwrapped before starting.
  • For best results, allow the fudge to set overnight in the refrigerator.
  • This fudge can be stored in an airtight container in the refrigerator for up to two weeks.
