It’s a refreshing dish that’s perfect for those busy days when you want something quick yet impressive. Ingredients
- 10 C. Watermelon, cut into 1 inch cubes
- 1 English Cucumber, sliced
- 1/2 Red Onion, thinly sliced (optional)
- 1/2 C. Fresh Mint Leaves, chopped
- 1/4 C. Fresh Basil Leaves, chopped
- 1 C. Feta Cheese Crumbles (opt for dairy free cheese crumbles for vegan, paleo, etc.)
- 1/4 C. Extra Virgin Olive Oil
- 1 Tbsp Lime Zest
- 3 Tbsp Lime Juice (about 3 limes)
- 1 Tbsp Raw Honey
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
Instructions
- In a large mixing bowl, add all watermelon salad ingredients, except the feta cheese.
- In a separate bowl, add all dressing ingredients and whisk to combine.
- Pour dressing over the watermelon salad and gently toss to combine.
- Top with feta cheese and either toss again or keep the cheese displayed on top.
- This salad is best served fresh.
