Ingredients

  • 3 tablespoons extra virgin olive oil
  • 60 milliliters pure maple syrup
  • 1 teaspoon ground cinnamon
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 100 grams walnuts, roughly chopped
  • 110 grams goat cheese, crumbled
  • Fresh flat-leaf parsley, finely chopped, for garnish

Instructions

  1. Set the oven to 200°C and allow it to preheat while preparing the ingredients.
  2. In a large mixing bowl, combine the cubed sweet potatoes, olive oil, maple syrup, ground cinnamon, salt, and pepper. Toss ingredients until the sweet potatoes are uniformly coated.
  3. Distribute the seasoned sweet potatoes evenly in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20 minutes. After 20 minutes, gently stir the sweet potatoes to ensure even cooking.
  5. Sprinkle the chopped walnuts over the partially roasted sweet potatoes. Roast for an additional 10 minutes until the sweet potatoes are tender and the walnuts are lightly toasted.
  6. Remove the tray from the oven and immediately scatter the crumbled goat cheese over the hot sweet potato and walnut mixture, allowing it to soften from residual heat.
  7. Transfer to a serving platter, garnish with chopped fresh parsley, and serve while warm.
