Ingredients

Scale
  • 2 cups cooked turkey, shredded
  • 2 cups sweet potatoes, peeled and diced
  • 1 cup green beans, trimmed and chopped
  • 1 cup corn, frozen or canned
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (optional)
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked turkey, sweet potatoes, green beans, corn, and chicken broth.
  3. Add garlic powder, onion powder, dried thyme, paprika, salt, and pepper to the mixture. Stir until well combined.
  4. Transfer the mixture to a greased 9×13-inch baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the top. If using breadcrumbs, mix them with olive oil and sprinkle over the cheese for added crunch.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

  • You can substitute ground turkey for the shredded turkey if preferred.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to add other vegetables based on your preference.
