Description

Tropical Coconut Pineapple Rice is a delightful dish that combines the creaminess of coconut milk with sweet pineapple, creating a tropical flavor experience.


Ingredients

  • 1 cup jasmine rice (or basmati)
  • 1 cup full-fat canned coconut milk
  • ½ cup water
  • 1 cup pineapple chunks (fresh or canned, drained)
  • ¼ teaspoon salt
  • ⅓ cup toasted shredded coconut
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. Rinse the rice thoroughly until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt.
  3. Bring to a boil over medium heat, stir once, then cover and reduce to low heat.
  4. Simmer for 15–18 minutes, or until liquid is absorbed and rice is tender.
  5. Turn off the heat and let sit, covered, for 5 minutes.
  6. Fluff the rice with a fork, then fold in the pineapple chunks and lime juice.
  7. Sprinkle toasted coconut and chopped cilantro over the top.
  8. Serve warm, chilled, or at room temperature.

Notes

  • For best results, use freshly squeezed lime juice.
  • This dish can be made ahead and served chilled for a refreshing salad.
