Description

A creamy delight featuring ground sausage, diced tomatoes, goat cheese, and herbs, served over your choice of pasta.


Ingredients

  • 450 g ground sausage
  • 1 shallot or small onion, thinly sliced
  • 3 cloves garlic, finely chopped
  • 30 ml olive oil
  • 15 oz (425 g) diced tomatoes, canned
  • 425 g dried pasta of choice
  • 13 g sugar
  • 2.5 ml salt, plus extra for pasta water
  • 30 ml balsamic vinegar
  • 5 ml fresh or dried oregano
  • 5 ml fresh or dried thyme
  • 0.5 g red pepper flakes (optional)
  • 85 g goat cheese
  • Parmesan cheese, finely grated, for topping

Instructions

  1. Thinly slice the shallot or onion and finely chop the garlic cloves.
  2. Heat olive oil in a large skillet over medium heat. Add the shallot along with sugar and salt. Sauté for 5 minutes until softened.
  3. Add the ground sausage to the pan. Break into small pieces and cook for approximately 10 minutes, or until evenly browned. Drain excess fat if needed.
  4. Add chopped garlic, balsamic vinegar, oregano, and thyme to the pan. Stir and cook for 1 minute to release aromas.
  5. Pour in the diced tomatoes with their juices. Stir to combine, cover, and leave to simmer on low heat for 30 minutes, allowing flavors to concentrate.
  6. Meanwhile, bring a large pot of salted water to a boil. Add dried pasta and cook according to the package instructions until al dente. Drain when done.
  7. Stir the goat cheese and red pepper flakes, if using, into the sauce until creamy. Add cooked pasta to the pan and gently toss to thoroughly coat.
  8. Plate the pasta, topping with extra goat cheese and a generous sprinkle of grated Parmesan cheese. Serve immediately.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • This dish can be made with whole wheat pasta for added fiber.
  • If you prefer a vegetarian option, replace sausage with a meat substitute.
