Ingredients
- 1 pound lean ground beef
- 4 medium Russet potatoes
- 1 packet (1 ounce) taco seasoning
- 0.5 cup water
- 1 cup shredded cheddar cheese
- 0.5 cup sour cream
- 0.25 cup chopped green onions
- 0.5 cup diced tomatoes
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce potatoes several times with a fork.
- Bake potatoes for 45-60 minutes, or until tender.
- While potatoes bake, brown ground beef in a skillet over medium-high heat. Drain excess fat.
- Stir in taco seasoning and water; simmer for 5 minutes.
- Once potatoes are cooked, cut them lengthwise and fluff the inside with a fork.
- Spoon the taco meat mixture into the potatoes.
- Top with cheddar cheese, sour cream, green onions, and diced tomatoes.
