Description

A homemade version of the popular Taco Bell Mexican Pizza, made easily with ground beef, tortillas, refried beans, and topped with Mexican cheese and fresh garnishes.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¾ cup water
  • 1 cup vegetable oil
  • 8 flour tortillas (taco size)
  • 15 ounce can refried beans
  • 10 ounce can enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • diced tomatoes (for topping)
  • sliced green onion (for topping)
  • sliced olives (for topping)
  • sour cream (for topping)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, brown and crumble the ground beef. Drain excess grease, then return beef to the skillet. Add taco seasoning and water, stirring to combine. Bring to a boil, reduce heat, and simmer until thickened.
  3. In a separate large skillet, heat the vegetable oil over medium heat. Add one tortilla and cook for about 3-4 minutes, flipping frequently, until crisp. Repeat with remaining tortillas and set aside.
  4. Heat the refried beans in a microwave-safe bowl until warm for easier spreading onto tortillas.
  5. On each fried tortilla, spread a generous layer of refried beans, then top with seasoned ground beef. Place another tortilla on top, spread about 2 tablespoons of enchilada sauce, and sprinkle with shredded Mexican cheese blend. Repeat for remaining pizzas.
  6. Place the assembled pizzas on a large nonstick baking sheet. Bake for 8-10 minutes or until cheese is melted.
  7. Serve the pizzas with toppings such as diced tomatoes, sliced green onions, sliced olives, and sour cream.

Notes

  • Ensure not to overcook the tortillas to maintain crispiness.
  • You can customize toppings based on personal preference.
  • Consider using ground turkey or chicken for a lighter option.
