Instructions

  1. In a blender, combine eggs, milk, a splash of vanilla, baking powder, soda, salt, and brown sugar. Blend slightly. Then, add the flour and pulse it just until smooth. Don’t overdo the mixing, so your pancakes stay fluffy.
  2. Dice the bacon, toss it into a hot skillet, and cook until it’s golden and crunchy. Spoon out the bacon bits and hold on to that smoky grease.
  3. Warm up the skillet over medium-low heat and add a bit of butter if needed. Pour some batter in and sprinkle bacon bits on the batter. Let it sizzle until bubbles form on top, then flip.
  4. Enjoy the pancakes hot with maple syrup, butter, or additional bacon bits. Keep them warm in an oven if making multiple batches.
