Delicious sweet potato rounds topped with creamy goat cheese and a tangy-sweet cranberry balsamic glaze, perfect for appetizers.

- 2 large sweet potatoes, sliced into 1.5 cm rounds
- 1 tbsp olive oil
- Salt & pepper
- 1/2 cup cranberry sauce (whole berry preferred)
- 100g soft goat cheese, crumbled
- 2 tbsp balsamic glaze
- Fresh thyme sprigs for garnish
- Cracked black pepper (optional)
Instructions
- Preheat oven to 200°C (390°F).
- Line a tray with parchment and place sweet potato slices in a single layer.
- Drizzle with olive oil and season with salt and pepper.
- Roast for 25–30 mins, flipping halfway, until golden and tender.
- Remove and cool slightly before topping.
- Spoon a dollop of cranberry sauce on each round.
- Add crumbled goat cheese generously.
- Drizzle with balsamic glaze.
- Garnish with thyme and serve warm or at room temp.

- Crispy on the edges, pillowy in the center, tangy-sweet and creamy all at once.
