Description

Delicious sweet potato rounds topped with creamy goat cheese and a tangy-sweet cranberry balsamic glaze, perfect for appetizers.


Ingredients

Scale
  • 2 large sweet potatoes, sliced into 1.5 cm rounds
  • 1 tbsp olive oil
  • Salt & pepper
  • 1/2 cup cranberry sauce (whole berry preferred)
  • 100g soft goat cheese, crumbled
  • 2 tbsp balsamic glaze
  • Fresh thyme sprigs for garnish
  • Cracked black pepper (optional)

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Line a tray with parchment and place sweet potato slices in a single layer.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 25–30 mins, flipping halfway, until golden and tender.
  5. Remove and cool slightly before topping.
  6. Spoon a dollop of cranberry sauce on each round.
  7. Add crumbled goat cheese generously.
  8. Drizzle with balsamic glaze.
  9. Garnish with thyme and serve warm or at room temp.
