Ingredients

  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar (packed)
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Salt
  • 1 cup Mashed Roasted Sweet Potatoes (about 1 medium sweet potato)
  • 1/4 cup Unsalted Butter (melted)
  • 2 Large Eggs
  • 1/2 cup Buttermilk (or whole milk)
  • 1 tsp Vanilla Extract
  • 1/2 cup Chopped Pecans
  • 1/4 cup All-Purpose Flour (for streusel)
  • 1/4 cup Brown Sugar (packed, for streusel)
  • 1 tsp Ground Cinnamon (for streusel)
  • 2 tbsp Unsalted Butter (cold and cubed, for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or lightly grease it with cooking spray.
  3. In a small bowl, combine the chopped pecans, flour, brown sugar, and cinnamon for the streusel topping.
  4. Cut the cold butter into small cubes and work it into the dry ingredients with a fork or pastry cutter until the mixture becomes crumbly. Set aside.
  5. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. In a separate bowl, combine the mashed sweet potatoes, melted butter, eggs, buttermilk, and vanilla extract. Mix until smooth.
  7. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  8. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  9. Sprinkle the cinnamon-pecan streusel topping evenly over the muffin batter.
  10. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  12. Serve warm or at room temperature.
