Description
Deliciously buttery bars with a crumbly topping filled with fresh strawberries.

- 375 g all-purpose flour
- 300 g granulated sugar
- 1 teaspoon salt
- Zest of 1 large lemon
- 115 g unsalted butter, very cold and cut into small cubes
- 3 large eggs, slightly beaten
- 900 g fresh strawberries, washed and sliced
- Juice of 1 large lemon
- 1 tablespoon cornstarch
- 150 g granulated sugar
Instructions
- Preheat oven to 175°C. Line a 23×33 cm baking dish with parchment paper, allowing paper to hang over the edges for easy removal.
- In a large mixing bowl, blend flour, sugar, salt, and lemon zest. Add cold butter and use a pastry cutter or fingertips to incorporate until the mixture resembles pea-sized crumbs.
- Mix in the eggs using a hand mixer or wooden spoon until the dough is crumbly but cohesive. Press together with hands if necessary until the mixture holds shape.
- Press two-thirds of the dough evenly into the bottom of the prepared baking dish.
- In a separate bowl, toss sliced strawberries with lemon juice, cornstarch, and sugar until evenly coated.
- Spread the strawberry filling evenly over the crust using a rubber spatula. Crumble the remaining dough over the top of the fruit layer.
- Bake in the preheated oven for 45–50 minutes, or until the top is lightly golden. Remove from oven and allow to cool completely in the pan.
- Lift cooled bars from the pan using the parchment paper overhang. Slice into desired portions and serve.
Notes
- Make sure the butter is very cold to achieve a flaky texture.
- For best flavor, use fresh, ripe strawberries.
- These bars are great served warm or chilled.
