Description
A unique and delicious dish that features grilled chicken glazed with a sweet and tangy strawberry balsamic sauce.
Ingredients
Scale
- 4 chicken breasts, boneless and skinless
- 1 cup (150 g) sliced, hulled strawberries
- 120 ml balsamic vinegar
- 2 tablespoons (30 ml) honey
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (3 g) garlic powder
- Salt, as needed
- Black pepper, as needed
- Basil leaves, fresh for topping
Instructions
- Mix up balsamic vinegar, honey, olive oil, garlic powder, salt, and black pepper in a bowl. Toss in chicken breasts and make sure they’re completely covered. Wrap and stick in the fridge for at least 30 minutes, but an hour works better.
- Get your grill or stovetop grill pan nice and hot at medium-high heat.
- Take chicken out of the marinade, let extra liquid drip off. Keep the marinade around for later.
- Put chicken on the grill for about 6-7 minutes each side, until it hits 75°C inside.
- While chicken’s cooking, pour that saved marinade into a small pot. Throw in your sliced strawberries and let it bubble on medium heat. Cook for 5-7 minutes, giving it a stir now and then, until it gets thicker and the berries get soft.
- Put your grilled chicken on a plate. Pour the strawberry-balsamic mix over the top and sprinkle with fresh basil.
Notes
- For best results, marinate the chicken for an hour.
- Ensure the chicken reaches an internal temperature of 75°C for safe consumption.
- This dish pairs well with rice or a fresh salad.
