Delicious chocolate marshmallow cookies made with Rice Krispies, perfect for a sweet treat.

- 1 cup semi-sweet chocolate chips
- 1/2 cup caramel chips
- 4 cups mini marshmallows
- 4 tablespoons salted butter
- 3 cups Rice Krispie cereal
Instructions
- Line a baking sheet with parchment paper or a silicone mat and set aside.
- Add chocolate chips, caramel chips, and butter to a medium microwave-safe bowl. Microwave on 50% power for 1 minute. Stir, then continue microwaving in 30-second intervals at 50% power until melted. Stir until mostly smooth.
- Place the marshmallows in the melted chocolate and microwave for 1 minute. Stir until smooth.
- Add rice cereal to the mixture and mix until evenly coated. Let the mixture cool for a few minutes.
- Using a 1/4 measuring cup, scoop the mixture into your hand sprayed with nonstick cooking spray. Roll into a ball, flatten into discs, and place on the prepared baking sheet to harden.
Notes
- Ensure that the mixture is cooled before shaping to prevent sticking.
- For a fun variation, add nuts or sprinkles on top before hardening.
