Description

Deliciously colorful and festive bars perfect for St. Patrick’s Day that will wow your guests!


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3/4 cup white chocolate chips
  • 1/2 cup rainbow sprinkles, divided

Instructions

  1. Preheat oven to 350°F. Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract; whisk until fully combined.
  4. Gradually fold the dry ingredients into the wet ingredients with a spatula, mixing until just combined.
  5. Stir in the white chocolate chips and 1/3 cup of the rainbow sprinkles.
  6. Spread the batter evenly into the prepared pan. Sprinkle the remaining sprinkles over the top.
  7. Bake for 25-28 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean.
  8. Cool completely in the pan on a wire rack before slicing into bars.
