- 1–2 fresh jalapeño peppers, thinly sliced (remove seeds for less heat)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup crumbled cotija cheese (or feta as a substitute)
- 1–2 limes, juiced
- 1 tsp chili powder (such as Tajín or regular chili powder)
- Salt, to taste
Instructions
- Start by placing the watermelon cubes in a large mixing bowl. This will be the base of your delicious salad!
- Next, add the thinly sliced jalapeños and chopped cilantro to the bowl with the watermelon. Gently toss everything together to ensure it’s evenly mixed.
- Squeeze fresh lime juice over the mixture and sprinkle the chili powder on top. Add a pinch of salt to taste! Toss everything gently again to ensure the watermelon is coated with all those tasty ingredients.
- Sprinkle the crumbled cotija cheese over the top of the salad and give it one last light toss, just to combine.
- Serve your spicy watermelon salad immediately for the best flavor and freshness. If you want to enhance the taste even more, chill it in the refrigerator for about 15-20 minutes before serving.
