Description

Delicious pancakes inspired by traditional Spanish churros, coated in cinnamon sugar.


Ingredients

  • 240 milliliters whole milk
  • 1 large egg
  • 28 grams unsalted butter, melted
  • 5 milliliters vanilla extract
  • 100 grams cinnamon sugar

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until thoroughly blended.
  2. In a separate bowl, beat the milk, egg, melted butter, and vanilla extract until the mixture is homogenous and smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold until just combined, ensuring the batter remains slightly lumpy for optimal fluffiness.
  4. Place a non-stick skillet over medium heat and lightly coat with butter or oil to prevent sticking.
  5. For each pancake, pour approximately 60 milliliters of batter onto the skillet. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown, about 2-3 minutes per side.
  6. Immediately after removing each pancake from the skillet, liberally coat both sides with cinnamon sugar to evoke traditional churro flavor.
  7. Continue with the remaining batter. Serve pancakes warm with additional cinnamon sugar or your preferred syrup.
