A delicious and healthy casserole made with spaghetti squash and ground turkey, perfect for a comforting meal.

- 1 medium spaghetti squash
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut spaghetti squash in half lengthwise, remove seeds, and place cut-side down on a baking sheet. Roast for 30–40 minutes, or until tender.
- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 2–3 minutes until fragrant.
- Add ground turkey, breaking it apart as it cooks, and brown for 5–7 minutes.
- Stir in chopped bell pepper, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
- Once squash is done, scrape the flesh into spaghetti-like strands using a fork. Add to the turkey mixture and toss to combine.
- Transfer the mixture to a greased 9×13-inch baking dish. Top with mozzarella and Parmesan.
- Bake for 20–25 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
Notes
- Ensure the squash is tender before removing from the oven.
- You can substitute ground turkey with ground chicken or beef if preferred.
- For a spicy kick, add red pepper flakes to the turkey mixture.
