Ingredients
- Ground beef: 1 lb (450 g)
- Sweet potatoes: 2 medium, peeled and diced (about 500 g)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 cup (frozen or canned)
- Bell peppers: 1 red and 1 yellow, diced
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Chili powder: 2 teaspoons
- Cumin: 1 teaspoon
- Olive oil: 2 tablespoons
- Salt: to taste
- Pepper: to taste
- Fresh cilantro: for garnish (optional)
Instructions
- Prepare the sweet potatoes by peeling and dicing them into small cubes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the ground beef until browned, seasoning with salt and pepper.
- In the same skillet, add the remaining olive oil and sauté the diced onion for 2-3 minutes, then add minced garlic and cook for another 30 seconds.
- Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, then sprinkle with chili powder and cumin.
- Stir in the diced bell peppers, black beans, and corn, cooking for another 5-7 minutes until sweet potatoes are tender.
- Return the cooked ground beef to the skillet, mix well, and cook for an additional 2-3 minutes. Adjust seasoning if needed and garnish with cilantro before serving.
Notes
- Feel free to add more vegetables based on your preference.
