Description

A delicious and hearty Southwest-inspired dish featuring ground beef and sweet potatoes cooked together for a flavorful one-pan meal.


Ingredients

  • Ground beef: 1 lb (450 g)
  • Sweet potatoes: 2 medium, peeled and diced (about 500 g)
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Corn: 1 cup (frozen or canned)
  • Bell peppers: 1 red and 1 yellow, diced
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Chili powder: 2 teaspoons
  • Cumin: 1 teaspoon
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste
  • Fresh cilantro: for garnish (optional)

Instructions

  1. Prepare the sweet potatoes by peeling and dicing them into small cubes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the ground beef until browned, seasoning with salt and pepper.
  3. In the same skillet, add the remaining olive oil and sauté the diced onion for 2-3 minutes, then add minced garlic and cook for another 30 seconds.
  4. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, then sprinkle with chili powder and cumin.
  5. Stir in the diced bell peppers, black beans, and corn, cooking for another 5-7 minutes until sweet potatoes are tender.
  6. Return the cooked ground beef to the skillet, mix well, and cook for an additional 2-3 minutes. Adjust seasoning if needed and garnish with cilantro before serving.
