Description

A delightful S’mores Explosion Cookie Dough Ice Cream Roll that combines the flavors of cookie dough, ice cream, and s’mores in a fun and delicious dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 2 cups heat-treated all-purpose flour
  • ½ tsp salt
  • ¾ cup mini chocolate chips
  • 1 ½ quarts vanilla ice cream (slightly softened)
  • ½ cup mini marshmallows
  • ½ cup crushed graham crackers
  • ½ cup mini chocolate chips
  • ¾ cup hot fudge sauce
  • ½ cup marshmallow fluff
  • Extra crushed graham crackers (optional garnish)
  • Chocolate drizzle (optional garnish)
  • Toasted marshmallows (optional garnish)

Instructions

  1. Prepare the Cookie Dough: Beat butter, brown sugar, and granulated sugar until creamy. Add milk and vanilla extract. Mix in heat-treated flour and salt until combined. Fold in mini chocolate chips. Press cookie dough evenly onto a parchment-lined baking sheet in a large rectangle (about ¼ inch thick). Freeze for 20–30 minutes until firm but flexible.
  2. Prepare the Ice Cream Layer: In a bowl, mix slightly softened vanilla ice cream with marshmallows, crushed graham crackers, and mini chocolate chips. Spread evenly over the chilled cookie dough layer, leaving about 1 inch border around edges. Freeze for 30 minutes to firm up slightly.
  3. Add the “Explosion” Filling: Drizzle hot fudge sauce over the ice cream layer. Add dollops of marshmallow fluff and gently swirl. Return to freezer for 15–20 minutes to set slightly before rolling.
  4. Roll the Dessert: Using parchment paper to help, carefully lift one long side and gently roll into a tight log, like a jelly roll. Wrap tightly in plastic wrap. Freeze for at least 4 hours or until completely firm.
  5. Slice and Serve: Remove from freezer and let sit 5 minutes before slicing. Top with extra chocolate drizzle, crushed graham crackers, and toasted marshmallows. Slice into thick rounds and serve immediately.

Notes

  • Make sure to heat-treat the flour by baking it at 350°F for 5-10 minutes to eliminate raw flour bacteria.
  • For an even more s’mores taste, consider adding more marshmallows or chocolate drizzle on top.
  • This dessert can be made ahead of time and stored in the freezer.
