S’mores Cinnamon Rolls

Description

Delicious S’mores Cinnamon Rolls that combine the flavors of classic s’mores with soft and fluffy cinnamon rolls, topped with a sweet marshmallow topping.


Ingredients

  • DOUGH
  • 1 cup Milk, warmed to 110℉
  • 2 1/4 tsp Active rise yeast, 11 grams whole packet
  • 2 Large eggs, room temperature lightly beaten
  • 4 1/2 cups All-purpose flour
  • 1 tsp Salt
  • 1/4 cup White granulated sugar
  • 10 TBSP Unsalted butter, cubed room temperature
  • FILLING
  • 1/2 cup Unsalted butter, room temperature
  • 1/2 cup Brown sugar, packed light or dark
  • 1/2 TBSP Ground cinnamon
  • 1 1/2 cups Chopped chocolate, Two 4oz chocolate bars
  • 1 1/2 cups Graham cracker crumbs, 1 packet
  • MARSHMALLOW TOPPING
  • 7 oz Marshmallow creme, 1 tub
  • 2 TBSP Water

Instructions

  1. Warm the milk in the microwave for 1 minute until it reaches 110℉. Sprinkle the yeast on top and let it sit for 10 minutes.
  2. In a mixing bowl, mix the flour, sugar, and salt. Add the cubed butter and knead until the butter is the size of a pea.
  3. Add the milk/yeast mixture and the lightly beaten eggs. Mix on low speed until a dough starts to form, then knead on medium speed for 5 minutes.
  4. Preheat the oven to 200℉, spray a large mixing bowl with nonstick spray, and place the dough in the bowl. Turn off the oven and let the dough rise for 1 hour until doubled in size.
  5. In a small bowl, beat the butter until smooth, then add the brown sugar and cinnamon and mix to combine.
  6. Chop the chocolate and pulse the graham crackers until finely crushed.
  7. On a lightly floured surface, roll the dough into a rectangle about 1/4 inch thick, then spread the cinnamon filling evenly over it. Sprinkle chopped chocolate and graham cracker crumbs on top.
  8. Roll the dough into a log, cut the uneven ends off, and slice into 12 equal rolls.
  9. Place the rolls in a greased 9×13 pan, cover with a kitchen towel, and let rise for 20 minutes while preheating the oven to 375℉.
  10. Bake the rolls for 20-25 minutes until the tops are lightly golden.
  11. Pour the marshmallow creme into a bowl, microwave for 30 seconds to melt, and mix in the water.
  12. Pour the melted marshmallow topping over the rolls and broil in the oven until lightly golden, being careful not to burn.

Notes

  • This recipe uses a stand mixer for ease, but you can mix by hand if necessary.
  • If the graham cracker crumbs start to fall out of the rolls, just toss them back in before baking.
  • For best results, ensure the milk is at the right temperature for the yeast to activate properly.
