Ingredients

  • 250 g beef mince (15% fat content)
  • 2 slices American cheese or mild cheddar
  • 30 ml burger sauce
  • 40 g sliced gherkins

Instructions

  1. Whip the egg white to soft peaks using an electric whisk.
  2. In a separate bowl, combine the egg yolk, plain flour, baking powder, and caster sugar. Gradually whisk in the milk until a smooth batter forms.
  3. Carefully fold the whipped egg white into the mixture to create a light and airy texture.
  4. Heat half the oil in a non-stick pan over medium heat. Spoon a quarter of the pancake batter into the pan, shaping it into a small round.
  5. Cook for 2-3 minutes per side until golden and set at the edges. Repeat until four pancakes are made, keeping cooked pancakes warm in a low oven.
  6. Increase pan heat to high and add remaining oil. Divide beef mince into two equal portions.
  7. Place one portion in the pan and press firmly with a spatula to flatten into a thin patty. Cook for 2-3 minutes until browned and crisped at the edges.
  8. Flip the patty, place a slice of cheese on top, and cook for an additional 1-2 minutes until the cheese melts. Repeat with the remaining beef.
  9. Layer a pancake on a plate, top with a cheesy beef patty, drizzle with burger sauce, and arrange sliced gherkins over the patty. Place another pancake on top.
  10. Repeat to assemble the second serving. Serve immediately for optimal texture and flavor.
