Description

A delicious and easy slow cooker dish featuring chicken, corn, and creamy sauce inspired by street corn flavors.

Ingredients

Scale
  • 1 lb Boneless Chicken Breasts/Thighs
  • 2 cups Corn
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 lime Lime Juice
  • 2 cloves Garlic
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional)

Instructions

  1. Layer the boneless chicken breasts or thighs in the bottom of the slow cooker.
  2. Layer the corn, cream cheese, cotija cheese, lime juice, minced garlic, and chili powder on top without stirring.
  3. Cover the slow cooker and set it on LOW for 4-5 hours or HIGH for 2-3 hours until the chicken is juicy and shreds easily.
  4. Once cooked, shred the chicken in the pot with two forks and stir everything together. Adjust consistency with broth or milk if desired.
  5. Serve topped with fresh cilantro for extra flavor.

Notes

  • Chicken thighs provide a richer flavor than chicken breasts.
  • Feel free to use vegan alternatives for cream cheese and cotija cheese.
  • Adjust spice levels by choosing chipotle or cayenne for more heat.
