Description

A delicious slow cooker recipe featuring tender pork chops and sweet potatoes, perfect for a comforting meal.


Ingredients

  • 4 boneless pork chops (about 1 inch thick)
  • 3 large sweet potatoes, peeled and sliced into 1-inch chunks
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • ¾ cup chicken broth
  • 2 tablespoons maple syrup or brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon dried thyme or rosemary
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Sear the Pork Chops (Optional): Heat olive oil in a skillet over medium-high heat. Season pork chops with salt and pepper. Sear each chop for 2–3 minutes per side until lightly golden.
  2. Prepare the Sweet Potatoes: Peel and cut sweet potatoes into chunks. Add them to the bottom of your greased slow cooker along with the sliced onions.
  3. Make the Sauce: In a small bowl, whisk together chicken broth, maple syrup (or brown sugar), Dijon mustard, soy sauce, garlic powder, cinnamon, and herbs.
  4. Layer in the Slow Cooker: Place seared (or raw) pork chops on top of the sweet potatoes. Pour the sauce evenly over everything.
  5. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until pork chops are fork-tender and sweet potatoes are soft but not mushy.
  6. Serve: Spoon sweet potatoes onto plates, place a pork chop on top, and drizzle with sauce from the slow cooker. Garnish with parsley or green onions if desired.

Notes

  • Searing the pork chops is optional but adds flavor.
  • Adjust the amount of maple syrup or brown sugar according to your sweetness preference.
