Description

A flavorful dish made with chicken breasts cooked slowly with Mediterranean ingredients like olives, tomatoes, and spices.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup Kalamata olives, pitted and halved
  • 1/2 cup red onion, sliced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Cooked couscous or quinoa, for serving

Instructions

  1. Place the chicken breasts in the slow cooker. Season with salt, pepper, oregano, basil, and red pepper flakes.
  2. Add the diced tomatoes, olives, red onion, and garlic on top of the chicken.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  4. Serve the chicken with the sauce over cooked couscous or quinoa, garnished with fresh parsley.

Notes

  • Adjust seasoning to taste.
  • Feel free to substitute quinoa with couscous based on preference.
  • Leftovers can be stored in the refrigerator for up to 3 days.
