- 4 boneless, skinless chicken breasts
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup Kalamata olives, pitted and halved
- 1/2 cup red onion, sliced
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Cooked couscous or quinoa, for serving
Instructions
- Place the chicken breasts in the slow cooker. Season with salt, pepper, oregano, basil, and red pepper flakes.
- Add the diced tomatoes, olives, red onion, and garlic on top of the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
- Serve the chicken with the sauce over cooked couscous or quinoa, garnished with fresh parsley.
Notes
- Adjust seasoning to taste.
- Feel free to substitute quinoa with couscous based on preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
