Description

A delicious Shrimp Quesadilla filled with succulent shrimp and melty cheese, perfect for any meal.


Ingredients

  • 2 tablespoons neutral-flavored oil (e.g., avocado oil, refined coconut oil, canola oil)
  • 1 small onion, diced (approximately 1 cup)
  • 1 medium bell pepper, chopped (approximately 1 cup)
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • salt to taste
  • 1 pound raw medium shrimp, peeled and deveined
  • 12 tablespoons fresh lime juice (juice from approximately 1 medium lime)
  • 4 tablespoons butter, plus more as needed
  • 6 10-inch flour tortillas
  • 3 cups shredded cheese (quesadilla cheese, Monterey cheese, or Mexican-style cheese blend, divided)

Instructions

  1. Heat one large skillet over medium-high heat. Add 2 tablespoons of neutral oil and swirl to coat the surface. When hot, add the diced onion and chopped bell pepper. Stir occasionally and cook for 5 to 6 minutes until onions are translucent and peppers are softened.
  2. Reduce heat to medium, and stir in taco seasoning to coat the vegetables. Add the shrimp and cook for 3 to 5 minutes, stirring occasionally, until shrimp are opaque and slightly curled.
  3. Remove skillet from heat. Sprinkle lime juice over the shrimp and vegetable mixture, stir, and set aside.
  4. Heat another skillet over medium heat. Add ½ tablespoon butter and swirl to coat. Place one flour tortilla flat in the skillet. Spoon approximately ⅓ cup shrimp mixture onto one half of the tortilla, then top with ½ cup shredded cheese. Cook for about 90 seconds or until the bottom is lightly browned.
  5. Carefully lift the opposite half of the tortilla and fold it over the filling. Press gently with a spatula. Flip the quesadilla and cook for 1 to 2 minutes until the second side is lightly browned. Sprinkle with salt to taste, and transfer to a large plate.
  6. Repeat the process with the remaining tortillas, shrimp, and cheese until all quesadillas are cooked. Serve warm with desired toppings and sides.

  • Optional toppings include cilantro, sour cream, and pico de gallo.
  • Feel free to adjust the amount of taco seasoning to suit your taste.
