Description

A delicious and easy recipe for shrimp fajitas that combines marinated shrimp with sautéed peppers and onions, perfect for a quick meal.


Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • Warm tortillas (flour or corn) for serving
  • Fresh cilantro, chopped (optional, for garnish)
  • Sour cream, salsa, guacamole (optional, for topping)

Instructions

  1. In a medium bowl, combine the shrimp with 1 tablespoon of olive oil, lime juice, chili powder, cumin, paprika, garlic powder, cayenne pepper (if using), and salt and pepper. Toss to coat the shrimp evenly. Let the shrimp marinate for 10-15 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced bell peppers and onions, cooking for 4-5 minutes, until the vegetables begin to soften and char slightly. Add the minced garlic and cook for another 30 seconds, until fragrant. Remove the vegetables from the skillet and set them aside.
  3. In the same skillet, add the seasoned shrimp and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.
  4. Add the cooked vegetables back into the skillet with the shrimp and toss everything together to combine and heat through.
  5. Serve the shrimp and vegetable mixture in warm tortillas. Garnish with fresh cilantro and serve with sour cream, salsa, or guacamole, if desired.
